Cheesy twice-baked potatoes

Ingredients
4 potatoes
1 can baked beans
1 cup cheese
2 cups baby spinach
Salt and pepper, to taste
Method
Prick potatoes with a fork or knife and bake at 180C and bake for 1 hour until centres are soft.
Cut an X shape across the top of the potato without cutting the whole way. Squeeze or scoop out the potato flesh.
Add spinach to the potato, pour in desired amount of baked beans, and sprinkle with grated cheese. Season with salt and pepper to taste.
Pop the potatoes in the oven for 5 more minutes to get a melty cheese topping.
Serve piping hot!
Serving Suggestion
Serve with some Greek yoghurt or sour cream!
