Cheesy twice-baked potatoes

Ingredients

  • 4 potatoes

  • 1 can baked beans

  • 1 cup cheese

  • 2 cups baby spinach

  • Salt and pepper, to taste


Method

  • Prick potatoes with a fork or knife and bake at 180C and bake for 1 hour until centres are soft.

  • Cut an X shape across the top of the potato without cutting the whole way. Squeeze or scoop out the potato flesh.

  • Add spinach to the potato, pour in desired amount of baked beans, and sprinkle with grated cheese. Season with salt and pepper to taste.

  • Pop the potatoes in the oven for 5 more minutes to get a melty cheese topping.

  • Serve piping hot!


Serving Suggestion

Serve with some Greek yoghurt or sour cream!
