Summery Tofu Sushi Rice Bowls

Ingredients

  • 2 cups brown rice

  • 1 block firm tofu

  • 1/4 cup salt-reduced soy sauce

  • 1 tin chickpeas, drained

  • 2 spring onions

  • 2 Tbs coriander or parsley leaves

  • 1 cucumber

  • 2 celery stalks

  • 1 capsicum

  • 1 bag baby spinach

  • 1 avocado (optional)


Method

  • Cook 2 cups of rice according to instructions on the packet.

  • Cut tofu into bite-sized cubes, and marinate in soy sauce for 15 minutes.

  • Finely slice the spring onions, coriander or parsley leaves, cucumber, celery, capsicum, and avocado.

  • When ready to serve, drain tofu from soy sauce.

  • Toss together tofu with all other ingredients, except for cooked brown rice to create a salad, and serve on hot rice.

  • Or, serve all ingredients at the table, and let everyone assemble as they like!


Serving Suggestion

Serve as is, or with your favourite condiments, such as pickled sushi ginger, sesame seeds, or mayo.
