Tofu Fried Rice

Ingredients
Tofu Marinade ingredients:
2 Tbs soy sauce
2 tsp rice vinegar
1/2 tsp sesame oil
1/2 tsp white pepper
1 block firm tofu, cut into small cubes
2 cups leftover brown rice (or 1 cup uncooked brown rice)
2 Tbs cooking oil
2 Tbs fresh ginger, minced or grated
1/2 tsp chilli flakes
1 carrot, diced
1 spring onion, finely chopped
1 cup frozen peas
1 cup frozen corn kernels (or 1 can corn kernels, drained)
2 Tbs soy sauce
White pepper, to taste
1/2 cup roasted peanuts,
Method
Mix together tofu marinade ingredients and tofu, and allow to marinade for 15 minutes.
If rice is uncooked, cook according to instructions on packet, and set aside to cool. Fried rice works best using cold, leftover rice.
Heat 1 Tbs of oil over medium heat in a large pan. Stir-fry the tofu until brown on all sides, around 7 minutes. Set aside.
Wipe pan clean and heat the remaining 1 Tbs oil in the pan. Cook ginger and chilli flakes until fragrant. Add carrot and spring onion and cook for another 2 minutes.
Add peas and corn and cook until they are heated through.
Add the rice, breaking up gently with the spatula.
Drizzle in the soy sauce, white pepper, and sesame oil, and stir to coat seasoning evenly, and until the rice is heated through.
Toss in tofu and peanuts and stir to combine, careful not to break up tofu.
Serve!
Serving Suggestion
Serve with sesame seeds and hot sauce, or top with more finely sliced spring onion!
