Nachos and Beans

4 persons
Ingredients
1 brown onion
1 carrot
1 Tbs olive oil
2 Tbs nacho spice mix (or, 2 tsp each of paprika, garlic powder, and cumin)
1 can black beans, drained
1 can Mexican-style tomatoes
1 bag corn chips
Optional, to serve:
1/4 cup Greek yoghurt
1/4 cup shredded cheese
1/4 cup salsa
1 avocado, or 1/2 cup guacamole
Jalapeno or fresh chilli
Method
Dice onion and grate carrot.
Heat oil over medium heat in a large pan. Brown onions in the pan, around 5 minutes.
Add carrot and cook for another 3 minutes, mixing continuously.
Add in the spice powder mix and cook for another 3 minutes.
Add beans and canned tomato, and cook for another 10 minutes, stirring occasionally.
Serve with corn chips, and toppings of choice!
Serving Suggestion
Place corn chips on a baking pan, sprinkle with cheese, and toast in the oven until cheese is melted. Top with ingredients of choice.
