Nachos and Beans

Ingredients

  • 1 brown onion

  • 1 carrot

  • 1 Tbs olive oil

  • 2 Tbs nacho spice mix (or, 2 tsp each of paprika, garlic powder, and cumin)

  • 1 can black beans, drained

  • 1 can Mexican-style tomatoes

  • 1 bag corn chips


Optional, to serve:

  • 1/4 cup Greek yoghurt

  • 1/4 cup shredded cheese

  • 1/4 cup salsa

  • 1 avocado, or 1/2 cup guacamole

  • Jalapeno or fresh chilli


Method

  • Dice onion and grate carrot.

  • Heat oil over medium heat in a large pan. Brown onions in the pan, around 5 minutes.

  • Add carrot and cook for another 3 minutes, mixing continuously.

  • Add in the spice powder mix and cook for another 3 minutes.

  • Add beans and canned tomato, and cook for another 10 minutes, stirring occasionally.

  • Serve with corn chips, and toppings of choice!


Serving Suggestion

Place corn chips on a baking pan, sprinkle with cheese, and toast in the oven until cheese is melted. Top with ingredients of choice.
