Easy Mexican Wraps

Ingredients
10 wraps
1 capsicum
1 bag lettuce
2 large tomatoes
1 red onion
1 can black beans, drained
1 can corn kernels, drained
1 cup grated cheese (optional)
3 Tbs mayo
Paprika, to taste
Salt and pepper, to taste
Method
Finely dice the capsicum, lettuce, tomato, and red onion.
In a large bowl, toss all ingredients except for the wraps together, and mix well.
Heat wraps on a frying pan for 10 seconds each side to warm up.
Place fillings in wrap and fold or roll up.
Toast wraps in frying pan or sandwich press until golden, and cheese is melty, around 2 - 3 minutes each side.
Serve hot and crispy!
Serving Suggestion
Serve with some Greek yoghurt or sour cream, and some hot sauce!
Great for meal prep - freeze instead of toasting the wraps, and reheat by microwaving and then sandwich pressing until fully heated through.
