Ingredients
2 cups of sliced green beans
1 can of 4 bean mix drained and rinsed
1 can of chickpeas drained and rinsed
1 capsicum, diced
1/2 red onion, finely diced
1/2 cup finely chopped fresh coriander
1/4 cup balsamic vinegar or similar
2 tablespoon olive oil or similar
Method
Bring a saucepan of water to a boil.
Add green beans and cook for 2 minutes.
Drain and immediately cool under cold running water, then set aside.
In a large salad bowl, combine the canned beans, chickpeas, chopped capsicum, chopped onion, chopped coriander and the cooled green beans.
Drizzle with vinegar and olive oil.
Add salt and pepper to taste.
Refrigerate until ready to serve.
Serving Suggestion
Serve with crackers and some mayonnaise.
