Green Bean Salad

4 persons


  • 2 cups of sliced green beans

  • 1 can of 4 bean mix drained and rinsed

  • 1 can of chickpeas drained and rinsed

  • 1 capsicum, diced

  • 1/2 red onion, finely diced

  • 1/2 cup finely chopped fresh coriander

  • 1/4 cup balsamic vinegar or similar

  • 2 tablespoon olive oil or similar


  • Bring a saucepan of water to a boil.

  • Add green beans and cook for 2 minutes.

  • Drain and immediately cool under cold running water, then set aside.

  • In a large salad bowl, combine the canned beans, chickpeas, chopped capsicum, chopped onion, chopped coriander and the cooled green beans.

  • Drizzle with vinegar and olive oil.

  • Add salt and pepper to taste.

  • Refrigerate until ready to serve.

Serving Suggestion

Serve with crackers and some mayonnaise.
