Black Bean Quinoa Bowl

Ingredients

  • 3/4 cup canned black beans rinsed

  • 2/3 cup quinoa

  • 1/4 cup hummus

  • 1 tablespoon lime juice

  • 1/4 medium avocado diced

  • 3 tablespoons salsa

  • 2 tablespoons chopped fresh coriander


Method

  • Cook quinoa according to the product instruction.

  • In a bowl, combine the cooked quinoa and beans.

  • In a small bowl, stir together the hummus and lime juice.

  • Thin the mixture with water to achieve your desired consistency.

  • Drizzle the hummus dressing over the beans and quinoa.

  • Top with sliced avocado, salsa and coriander.


Serving Suggestion

Serve with cracked pepper and some mayonnaise.
