SERVINGS

Ingredients
Half a loaf of left over stale bread, torn into pieces
125 grams melted butter
2 cups of sultanas, raisins or a mix of both
2 eggs
75 grams sugar
1 teaspoon ground cinnamon
1/2 teaspoon nutmeg
Extra sugar for topping
Method
Preheat the oven to 180°C (356°F).
Soak bread in water for half hour, then squeeze out the water.
Add the remaining ingredients (except extra sugar) and mix well.
Line a 22cm (9 inch) square tin with greaseproof paper and pour in the mixture. Sprinkle with the extra sugar.
Bake for about 60 - 70 minutes.
Tip! Cover the pan with kitchen foil if it starts to brown during baking to avoid burning on top.
The bread pudding is cooked when an inserted skewer comes out clean.
Sprinkle a little caster sugar over the top before serving.
Serving Suggestion
Best served warm with a steaming cup of tea or coffee!
