Old-Fashioned Bread and Butter Pudding

Ingredients

  • Half a loaf of left over stale bread, torn into pieces

  • 125 grams melted butter

  • 2 cups of sultanas, raisins or a mix of both

  • 2 eggs

  • 75 grams sugar

  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon nutmeg

  • Extra sugar for topping


Method

  • Preheat the oven to 180°C (356°F).

  • Soak bread in water for half hour, then squeeze out the water.

  • Add the remaining ingredients (except extra sugar) and mix well.

  • Line a 22cm (9 inch) square tin with greaseproof paper  and pour in the mixture. Sprinkle with the extra sugar.

  • Bake for about 60 - 70 minutes.

  • Tip! Cover the pan with kitchen foil if it starts to brown during baking to avoid burning on top.

  • The bread pudding is cooked when an inserted skewer comes out clean.

  • Sprinkle a little caster sugar over the top before serving.


Serving Suggestion

Best served warm with a steaming cup of tea or coffee!
