Classic Chicken Fried Rice

Ingredients
2 Tbs oil
300 - 500g leftover roast chicken, shredded
500g pre-cooked rice, cold
100g frozen peas
100g frozen sweetcorn
1 red capsicum, diced
4 spring onions (or 1 medium onion), sliced
3 cloves garlic, minced
3 eggs
2 Tbs sesame oil
2 Tbs soy sauce (or gluten-free tamari)
Method
Heat oil in a large pan over medium-high heat.
Add rice, chicken, and all the vegetables. Stir-fry until everything is warmed through.
Add garlic and mix through, fry for 1 more minute.
Crack the eggs into a bowl or mug and beat well.
Make a well in the centre of the fried rice and pour in the egg. Cook for 30 seconds before mixing with the rice.
Add in soy sauce and sesame oil and mix, fry until liquid has evaporated.
Continue to fry off, stirring just occasionally to get crispy browned rice at the bottom of the pan.
Serve.
Serving Suggestion
Serve topped with spring onion or fried shallots, and chilli oil or hot sauce!
Tips
Use any leftover vegetable you have sitting in your fridge or garden! Make sure they are diced finely before you add them in.
