Garlic and Parmesan Courgettes

Ingredients

  • 2 medium courgettes (zucchinis)

  • 1 Tbs butter

  • 2 cloves garlic, crushed, grated or finely chopped

  • ¼ cup grated parmesan cheese

  • Salt and black pepper to taste


Method

  • Wash and slice courgettes and pat dry with a paper towel.

  • Heat a frying pan to medium and fry the courgettes in butter until just soft, sprinkling with salt and black pepper to your taste.

  • Add garlic to the pan and fry for a further one minute.

  • Grate the parmesan cheese onto the courgettes, turning constantly until crisp and browned.


Serving Suggestion

Serve hot as a side dish!
