Bubble and Squeak

Ingredients

  • 6 tablespoons butter or vegetable oil

  • ½ cup finely chopped onion

  • 500g mashed potatoes, about 2 cups

  • 1 cup of any leftover vegetables, finely chopped (such as cabbage, carrot, onion, leek, broccoli, spinach, courgette, etc. Anything you want!)

  • Bacon, chopped (optional)

  • Salt and freshly ground black pepper, to taste

  • 4 eggs for serving, (optional)


Method

  • In a large frying pan, melt butter (or oil) over medium heat, making sure it doesn't brown.

  • Add chopped onion and fry gently for about 3 minutes until soft and translucent.

  • Turn the heat up slightly and add mashed potatoes and leftover vegetables, and bacon if using.

  • Fry for at least 10 minutes, flipping regularly to brown the outside edges. Occasionally press into the pan.

  • When the mixture is heated right through, leave without flipping to brown the edges on both sides. Season with salt and pepper.


Serving Suggestion

Serve hot, topped with a poached egg, sour cream and sweet chilli sauce.
