Ingredients
6 tablespoons butter or vegetable oil
½ cup finely chopped onion
500g mashed potatoes, about 2 cups
1 cup of any leftover vegetables, finely chopped (such as cabbage, carrot, onion, leek, broccoli, spinach, courgette, etc. Anything you want!)
Bacon, chopped (optional)
Salt and freshly ground black pepper, to taste
4 eggs for serving, (optional)
Method
In a large frying pan, melt butter (or oil) over medium heat, making sure it doesn't brown.
Add chopped onion and fry gently for about 3 minutes until soft and translucent.
Turn the heat up slightly and add mashed potatoes and leftover vegetables, and bacon if using.
Fry for at least 10 minutes, flipping regularly to brown the outside edges. Occasionally press into the pan.
When the mixture is heated right through, leave without flipping to brown the edges on both sides. Season with salt and pepper.
Serving Suggestion
Serve hot, topped with a poached egg, sour cream and sweet chilli sauce.
