Easy Orange Skin Syrup

Ingredients
2 orange skins, washed (or any kind of citrus like lemon, lime or grapefruit)
150g white sugar (1/2 cup or 8 tablespoons)
1/4 tsp salt (optional)
Method
Put the orange skins into a glass, ceramic, or metal mixing bowl.
Toss in white sugar and salt. Mix thoroughly with a spoon or spatula.
Cover and refrigerate overnight, or up to 48 hours.
Once all the sugar has melted into a syrup, take out the fruit skins and squeeze out all the syrup back into the bowl (using a colander, lemon squeezer, or by hand). Discard fruit skins once squeezed through.
It's ready! store in an airtight container for up to 1 month or serve with desserts or drinks.
Serving Suggestion
Serve drizzled on pancakes, waffles, or French toast.
Sweeten your ice cream, breakfast oats, or yoghurt.
Mix into cocktails or to sweeten your iced tea.
Use as a simple syrup to moisten your cake layers when decorating.
